Mac and Cheese Supreme

- 1 cooking spray
- 3 tablespoon(s) coconut oil
- 1/3 cup(s) flour
- 2 1/2 cup(s) almond milk
- 1/2 cup(s) low fat grated Parmesan cheese
- 1/2 cup(s) low fat shredded cheddar cheese
- 1/2 cup(s) low fat ricotta cheese
- 6 cup(s) elbow macaroni, cooked
- 1 dash(es) salt
- 4 ounce(s) lean turkey sausage, cooked and chopped
- 10 ounce(s) butter crackers, crushed
Directions
- Preheat oven to 375ºF. Use cooking spray to grease a casserole dish and set aside.
- In a large saucepan over medium heat, coconut oil. Whisk in the flour and cook, stirring for 2 to 3 minutes until the mixture is blended well.
- Gradually whisk in the almond milk, and cook until the mixture thickens.
- Stir in the cheeses until all the cheese has melted.
- Remove from the heat and stir in the macaroni, salt, and sausage.
- Spoon in the mixture into the casserole dish.
- In a small bowl, stir together the crackers and sprinkle over the macaroni.
- Bake for 30 to 35 minutes.
- Remove from heat and serve warm.
