Garlic Mashed Potatoes

- 10 garlic cloves
- 32 ounce(s) red potatoes
- 2 teaspoon(s) salt
- 1/2 cup(s) skim milk
- 2 cup(s) half and half
- 1 dash(es) pepper
Directions
- Preheat oven to 400 °F.
- Place the garlic on a sheet of aluminum foil and wrap tightly.
- Roast for about 30 minutes. and then unwrap.
- Peel and dice potatoes.
- Place in a large saucepan, add the salt and cover with water.
- Bring to a boil over medium-high heat and then reduce to maintain a rolling boil.
- Cook for about 20 minutes.
- Remove from the heat and drain.
- Heat the milk, half-and-half in a medium saucepan over medium heat for about 5 minutes.
- In a large saucepan, combine the potatoes and the roasted garlic, cream mixture, salt and pepper.
- Mash with a potato masher.
- Serve warm.
