  • 1 cooking spray
  • 3 tablespoon(s) coconut oil
  • 1/3 cup(s) flour
  • 2 1/2 cup(s) almond milk
  • 1/2 cup(s) low fat grated Parmesan cheese
  • 1/2 cup(s) low fat shredded cheddar cheese
  • 1/2 cup(s) low fat ricotta cheese
  • 6 cup(s) elbow macaroni, cooked
  • 1 dash(es) salt
  • 4 ounce(s) lean turkey sausage, cooked and chopped
  • 10 ounce(s) butter crackers, crushed

Directions

    1. Preheat oven to 375ºF. Use cooking spray to grease a casserole dish and set aside.
    2. In a large saucepan over medium heat, coconut oil. Whisk in the flour and cook, stirring for 2 to 3 minutes until the mixture is blended well.
    3. Gradually whisk in the almond milk, and cook until the mixture thickens.
    4. Stir in the cheeses until all the cheese has melted.
    5. Remove from the heat and stir in the macaroni, salt, and sausage.
    6. Spoon in the mixture into the casserole dish.
    7. In a small bowl, stir together the crackers and sprinkle over the macaroni.
    8. Bake for 30 to 35 minutes.
    9. Remove from heat and serve warm.
