Vegan Cauliflower Mash
Do the mash! The cauliflower mash -- it's a great way to get that mashed potato taste without mashed potato calories and carbs.

Recipe
- 1 medium cauliflower head, cut into florets
- 4 tablespoon(s) Tofutti Sour Supreme
- 3 tablespoon(s) margarine
- 2 tablespoon(s) green onions, chopped
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) pepper, to taste
Directions
- Boil 1.5 quarts of salted water in a large pot. Add cauliflower and cook until tender, about 15 minutes.
- Drain the colander, and remove excess water by pressing down on the florets with the lid of the pot. Bring cauliflower to pot again.
- Add imitation sour cream and margarine and mix with hand mixer until smooth. Add salt and pepper to taste. Add chopped chives to garnish the top.
- Serve warm.
