Vegan Cauliflower Mash

Do the mash! The cauliflower mash -- it's a great way to get that mashed potato taste without mashed potato calories and carbs.

  • 1 medium cauliflower head, cut into florets
  • 4 tablespoon(s) Tofutti Sour Supreme
  • 3 tablespoon(s) margarine
  • 2 tablespoon(s) green onions, chopped
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste

Directions

    1. Boil 1.5 quarts of salted water in a large pot. Add cauliflower and cook until tender, about 15 minutes. 
    2.  Drain the colander, and remove excess water by pressing down on the florets with the lid of the pot. Bring cauliflower to pot again.
    3. Add imitation sour cream and margarine and mix with hand mixer until smooth. Add salt and pepper to taste. Add chopped chives to garnish the top.
    4. Serve warm.
