Cheesy Chicken Casserole
Creamy, cheesy and delicious...everything a casserole should be. It won't take long to make and it will take even less time for this dish to become a family favorite.

- 1 tablespoon(s) extra virgin olive oil
- 6 chicken breasts
- 1 teaspoon(s) salt
- 1 teaspoon(s) pepper
- 2 cup(s) penne pasta
- 1/2 cup(s) low fat shredded cheddar cheese
- 1/2 cup(s) low fat shredded mozzarella cheese
- 1 tablespoon(s) light butter
- 1/3 cup(s) reduced fat sour cream
- 1/4 cup(s) low fat cream cheese
- 1 cup(s) frozen peas
- 1 cup(s) frozen carrots
- 1/3 cup(s) plain breadcrumbs
Directions
- Preheat oven to 350º.
- Boil the pasta in salted water, according to package directions.
- Meanwhile, heat oil in a medium skillet over medium-high heat.
- Season both sides of the chicken breasts with salt and pepper.
- Cook, turning once for about 5 minutes on each side.
- Transfer to a plate , cut into cubes and keep warm.
- Drain pasta and return to the pot.
- Stir in shredded cheese, butter, sour cream, and cream cheese, until creamy.
- Add peas, carrots and chicken.
- Transfer mixture to casserole dish and sprinkle breadcrumbs on top.
- Bake uncovered for 30 minutes or until browned on top.
- Serve hot.
