Apple and Broccoli Curry

  • 1 1/2 teaspoon(s) ground cumin
  • 1/2 teaspoon(s) ground coriander
  • 1/2 teaspoon(s) pepper
  • 1/2 teaspoon(s) ground cardamom
  • 1/4 teaspoon(s) ground cloves
  • 1/2 teaspoon(s) spicy brown mustard
  • 1/2 teaspoon(s) red chili flakes
  • 1/2 teaspoon(s) ground turmeric
  • 2 cup(s) broccoli florets
  • 2 apples, quartered and cored
  • 1 1/2 garlic cloves, peeled and minced
  • 1/3 cup(s) onion, chopped
  • 1/4 cup(s) coconut milk
  • 1/3 cup(s) cashews
  • 2 tablespoon(s) parsley
  • 2 cup(s) organic brown rice

Directions

    1. Preheat oven to 400ยบ F.
    2. Meanwhile, cook brown rice according to package directions.
    3. Combine all ingredients except the cashews and parsley in a 9 x13 inch baking dish.
    4. Roast for 30 minutes, stirring once halfway through.
    5. Reduce heat to low and cook for another 20 minutes.
    6. Sprinkle with cashews and parsley.
    7. Serve atop brown rice.
