Apple and Broccoli Curry

Directions
- Preheat oven to 400ยบ F.
- Meanwhile, cook brown rice according to package directions.
- Combine all ingredients except the cashews and parsley in a 9 x13 inch baking dish.
- Roast for 30 minutes, stirring once halfway through.
- Reduce heat to low and cook for another 20 minutes.
- Sprinkle with cashews and parsley.
- Serve atop brown rice.
