- 7 potatoes ( 2 pounds), cut into 1/8 inch-thick slices
- 1 tablespoon(s) extra virgin olive oil
- 1/5 cup(s) flour
- 1 cup(s) almond milk
- 8 ounce(s) turkey bacon
- 1 onion, chopped into 1/4-inch pieces
- 1 cup(s) sour cream, reduced fat
- 2 cup(s) shredded reduced fat Swiss cheese
- 1 cooking spray
Directions
- Preheat the oven to 375 ºF. Spray a 9 x 13-inch baking pan with cooking spray.
- Arrange half of the slices of potatoes in the bottom of the pan.
- Lightly brush slices with olive oil.
- Sprinkle the flour over the layer and top with the remaining potatoes.
- Pour the almond milk over the potatoes and bake for 45 minutes.
- Meanwhile, lightly spray a sauté pan with cooking spray.
- Sauté the turkey bacon over medium-high heat for 10 minutes.
- Add the onion to the pan and cook for 10 minutes. Drain and set aside.
- Remove the potatoes from the oven and spread the sour cream over the cooked potatoes.
- Cover with turkey bacon mixture.
- Sprinkle the cheese over the mixture and bake for 20 minutes more.
- Remove from the oven and serve.
