Vanilla Bean & Berries

Vanilla Bean & Berries

Recipe

  • 3/4 cup(s) pure cane sugar
  • 1 vanilla bean, split lengthwise and seeds scraped out
  • 1/2 teaspoon(s) cinnamon stick
  • 1/8 teaspoon(s) lemon zest
  • 2 cup(s) mixed berries
  • 2 lemon wedges

Directions

    1. In a medium saucepan, bring 1 1/4 cups of water to a boil. Add the sugar and stir until it dissolves into the water.
    2. Add cinnamon, vanilla beans with seeds and a few grinds of lemon zest. Simmer for about 5 mins. 
    3. Gently place berries into the saucepan and let them simmer for about a minute. Remove from heat, cover and allow berries to cool inside the pot. Squeeze fresh lemon onto the berries once cooled.
    4. Serve over pancakes, cereal or cake.
