Vanilla Bean & Berries

- 3/4 cup(s) pure cane sugar
- 1 vanilla bean, split lengthwise and seeds scraped out
- 1/2 teaspoon(s) cinnamon stick
- 1/8 teaspoon(s) lemon zest
- 2 cup(s) mixed berries
- 2 lemon wedges
Directions
- In a medium saucepan, bring 1 1/4 cups of water to a boil. Add the sugar and stir until it dissolves into the water.
- Add cinnamon, vanilla beans with seeds and a few grinds of lemon zest. Simmer for about 5 mins.
- Gently place berries into the saucepan and let them simmer for about a minute. Remove from heat, cover and allow berries to cool inside the pot. Squeeze fresh lemon onto the berries once cooled.
- Serve over pancakes, cereal or cake.
