Vegan Banana Bread

  • 12 teaspoon(s) light non-dairy butter spread
  • 2/3 cup(s) unsweetened applesauce
  • 1 1/2 cup(s) all purpose flour
  • 1 teaspoon(s) baking soda
  • 1 teaspoon(s) salt
  • 2 1/2 very ripe bananas (1 cup)
  • 8 tablespoon(s) non-dairy sour cream
  • 1 teaspoon(s) vanilla extract
  • 1/2 cup(s) walnuts, chopped

Directions

    1. Preheat oven to 375 degrees.  Mix softened non-dairy butter and brown sugar until creamy with mixer or whisk by hand. Add applesauce and mix completely.
    2. In a bowl, sift flour, baking soda, and salt. Add to non-dairy butter mixture and mix.  
    3. Add bananas, non- dairy sour cream, and vanilla extract. Mix.
    4. Add walnuts and add batter to pan.
    5. Bake for 1 hour or until center of loaf comes out clean with toothpick. 
    6. Cool on rack for 5-10 minutes. Slice and enjoy!
