Chicken and Hummus Panini
Take a trip to the Mediterranean without leaving the comforts of your kitchen. Prepared with chicken, cheese, cucumbers, roasted peppers and more, this is a palate-pleasing panini that can be whipped up with a moment's notice.

mushrooms, sliced

slices whole grain bread

chicken breast, sliced thin

green onions, chopped into rounds

sliced of reduced fat provolone cheese

slices cucumber

sliced roasted red pepper

cilantro, chopped

reduced fat crumbled feta cheese

Directions
Sauté the mushrooms on medium heat in a nonstick skillet for about 5 minutes.
Season with soy sauce.
Spread all 4 pieces of bread with hummus.
Layer hummus on two of the four pieces of bread and add slices of chicken, green onions, provolone, cucumber, roasted red pepper and cilantro.
Drain mushrooms and place them on top.
Add feta cheese and close with reserved pieces of bread.
Place sandwiches into the nonstick skillet.
Cook for about 3-5 minutes, until toasted on the bottom.
Flip sandwiches and then cook the other side in the same way.
Paninis should be browned on both sides.
Cut each sandwich in half and serve warm.
