Chicken and Hummus Panini
Take a trip to the Mediterranean without leaving the comforts of your kitchen. Prepared with chicken, cheese, cucumbers, roasted peppers and more, this is a palate-pleasing panini that can be whipped up with a moment's notice.

- 8 ounce(s) mushrooms, sliced
- 2 teaspoon(s) soy sauce
- 4 slices whole grain bread
- 1/2 pound(s) chicken breast, sliced thin
- 4 green onions, chopped into rounds
- 4 sliced of reduced fat provolone cheese
- 10 slices cucumber
- 1/2 cup(s) sliced roasted red pepper
- 1/2 cup(s) cilantro, chopped
- 1/4 cup(s) reduced fat crumbled feta cheese
- 6 tablespoon(s) hummus
Directions
- Sauté the mushrooms on medium heat in a nonstick skillet for about 5 minutes.
- Season with soy sauce.
- Spread all 4 pieces of bread with hummus.
- Layer hummus on two of the four pieces of bread and add slices of chicken, green onions, provolone, cucumber, roasted red pepper and cilantro.
- Drain mushrooms and place them on top.
- Add feta cheese and close with reserved pieces of bread.
- Place sandwiches into the nonstick skillet.
- Cook for about 3-5 minutes, until toasted on the bottom.
- Flip sandwiches and then cook the other side in the same way.
- Paninis should be browned on both sides.
- Cut each sandwich in half and serve warm.
