1 cup(s) flour
1 cup(s) cornmeal
1/3 cup(s) sugar
2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
1/4 cup(s) unsweetened applesauce
1/3 cup(s) canola oil
1 cup(s) almond milk, unsweetened and unflavored
1/4 cup(s) frozen sweet corn
1chili pepper, finely chopped
Directions
Preheat oven to 400 degrees. Grease a 8 X 8-inch baking pan with oil.
In a large bowl, mix flour, cornmeal, sugar, baking powder, and salt.
In a separate bowl, mix applesauce with oil. Then whisk in almond milk until completely mixed.
Add wet mixture to dry mixture and stir until just combined.
Add chili pepper and corn, fold into batter.
Pour and spread batter into the baking sheet and bake until golden and lightly browned, about 30 to 35 minutes. Place a toothpick in the center, once it comes out clean, the bread is done baking.
