Vegan Corn Bread
It's not corny to go vegan. Enjoy flavor and stay healthy at the same time with this unadultered, animal-free cornbread. Spice it up with a face-free jalapeno as well.

- 1 cup(s) flour
- 1 cup(s) cornmeal
- 1/3 cup(s) sugar
- 2 teaspoon(s) baking powder
- 1/4 teaspoon(s) salt
- 1/4 cup(s) unsweetened applesauce
- 1/3 cup(s) canola oil
- 1 cup(s) almond milk, unsweetened and unflavored
- 1/4 cup(s) frozen sweet corn
- 1 chili pepper, finely chopped
Directions
- Preheat oven to 400 degrees. Grease a 8 X 8-inch baking pan with oil.
- In a large bowl, mix flour, cornmeal, sugar, baking powder, and salt.
- In a separate bowl, mix applesauce with oil. Then whisk in almond milk until completely mixed.
- Add wet mixture to dry mixture and stir until just combined.
- Add chili pepper and corn, fold into batter.
- Pour and spread batter into the baking sheet and bake until golden and lightly browned, about 30 to 35 minutes. Place a toothpick in the center, once it comes out clean, the bread is done baking.
- Let cool, serve and enjoy!
