3 floz warm water
16 tablespoon(s) creamy peanut butter
4 tablespoon(s) hoisin sauce
1/4 cup(s) fresh cilantro, chopped
1garlic clove, minced
1 teaspoon(s) red pepper flakes
3/4 cup(s) sesame seeds
24 ounce(s) fat-free chicken breasts, boneless & skinless, cut into 3/4 inch strips
6 tablespoon(s) vegetable oil
Directions
In a medium sized bowl combine water, peanut butter, hoisin, cilantro, garlic and pepper flakes. Mix together well.
In a shallow dish, pour sesame seeds.
Cut fat off chicken breasts and cut into 3/4-inch strips.
Season strips with salt and pepper and dip into the bowl with sesame seeds. Make sure to press firmly so that the seeds stick to the chicken strips.
In a large skillet, warm 3 tablespoons of olive oil over medium heat.
Place half the chicken strips into the hot oiled skillet and cook until golden brown on each side and cooked all the way through. This should take about 2-3 minutes per side. Repeat with remaining chicken strips, Wipe skillet off and re-warm with oil before cooking next batch.
Transfer chicken strips to a paper towel-lined plate to remove excess oil.
