Sesame Chicken Fingers with Spicy Peanut Sauce

- 3 floz warm water
- 16 tablespoon(s) creamy peanut butter
- 4 tablespoon(s) hoisin sauce
- 1/4 cup(s) fresh cilantro, chopped
- 1 garlic clove, minced
- 1 teaspoon(s) red pepper flakes
- 3/4 cup(s) sesame seeds
- 24 ounce(s) fat-free chicken breasts, boneless & skinless, cut into 3/4 inch strips
- 6 tablespoon(s) vegetable oil
Directions
- In a medium sized bowl combine water, peanut butter, hoisin, cilantro, garlic and pepper flakes. Mix together well.
- In a shallow dish, pour sesame seeds.
- Cut fat off chicken breasts and cut into 3/4-inch strips.
- Season strips with salt and pepper and dip into the bowl with sesame seeds. Make sure to press firmly so that the seeds stick to the chicken strips.
- In a large skillet, warm 3 tablespoons of olive oil over medium heat.
- Place half the chicken strips into the hot oiled skillet and cook until golden brown on each side and cooked all the way through. This should take about 2-3 minutes per side. Repeat with remaining chicken strips, Wipe skillet off and re-warm with oil before cooking next batch.
- Transfer chicken strips to a paper towel-lined plate to remove excess oil.
- Serve with dipping sauce. Enjoy!
