Dairy-Free Chocolate Gelato

- 2 ounce(s) bittersweet chocolate
- 2 1/4 cup(s) almond milk, sweetened
- 1/3 cup(s) soy cream
- 3/4 cup(s) sugars, finely granulated
- 1 cup(s) cocoa powder, unsweetened
- 4 egg yolks
Directions
- Coarsely chop chocolate
- In a 2-quart sauce pan, bring milk, soy-cream and half the sugar to a simmer. Stir until sugar is dissolved.
- Remove pan from heat. Stir in cocoa powder and chocolate and stir until all chocolate is melted and smooth.
- In a water and iced bowl, beat egg yolks and remaining sugar until thick.
- Add hot chocolate mixture slowly, taking care not to cook eggs, whisk enire time while adding mixture.
- Cook on low heat, stirring occasionaly until thermometer reads 170 degrees F.
- Pour mixture through colander and place in an iced bowl and let cool.
- Allow mixture to cool while covered
- Freeze mixture in icecream maker and transfer into airtight container. Allow to harden for 1-3 hours in freezer
