 Quick and Tasty Veggie Chili

  • 1 tablespoon(s) olive oil
  • 1 cup(s) chopped onions
  • 3 cloves garlic, minced
  • 3 tablespoon(s) chili powder
  • 1 teaspoon(s) ground cumin
  • 15 ounce(s) can crushed tomatoes, drained
  • 3 1/4 cup(s) veggie ground crumbles
  • 2 cup(s) dark kidney beans
  • 2 cup(s) black beans
  • 1 package instant brown rice
  • 1 haas avocado

Directions

    1. Heat olive oil in skillet and sauté onion and garlic.
    2. Add chili powder, cumin and tomatoes. Simmer 5 minutes.
    3. Stir in veggie crumbles, kidney beans and black beans and cook for another 5 minutes.
    4. Cook rice according to directions. Slice avocado and spoon pulp out of skin.
    5. Chop into small squares. Serve chili over brown rice and top with avocado.
