Super Savory Vegetarian Scones

  • 2 cup(s) whole wheat flour
  • 2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 4 tablespoon(s) soy margarine
  • 8 tablespoon(s) egg whites
  • 3/4 cup(s) canned coconut milk
  • 1 tablespoon(s) lemon juice
  • 1 tablespoon(s) chopped fresh dill

Directions

    1. Preheat oven to 425 degrees F.
    2. Combine flour, baking powder, and salt in large bowl.
    3. Add soy margarine and mix well.
    4. Add egg whites, coconut milk, lemon juice and dill. Mix well.
    5. Stir mixture into flour mixture until it forms soft dough that pulls away from side of bowl.
    6. Turn out dough onto floured surface. Knead dough.
    7. Roll out dough into rectangle using rolling pin.
    8. Cut dough into 6 squares. Cut each square diagonally in half, making 12 triangles.
    9. Place triangle onto baking sheets.
    10. Bake until golden brown. Approx. 15 minutes. Allow to cool for 10 minutes and serve.
