  • 2 1/2 cup(s) whole wheat flour
  • 1 cup(s) unsweetened applesauce
  • 1 cup(s) unsweetened cocoa powder
  • 2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1 cup(s) unsweetened soy milk
  • 2 tablespoon(s) lemon juice
  • 6 tablespoon(s) coconut oil
  • 1/2 cup(s) mashed banana
  • 1 1/2 teaspoon(s) vanilla
  • 1 1/2 cup(s) cacao nibs

Directions

    1. Preheat oven to 400 degrees. Grease 12 large muffin cups; set aside.
    2. Combine flour, applesauce, cocoa powder, baking soda and salt in a large bowl.
    3. Combine Unsweetened soy milk, lemon juice, coconut oil, banana and vanilla in small bowl until blended.
    4. Stir into flour mixture just until moistened.
    5. Fold in Cacao Nib. Spoon into prepared muffin cups, filling half full.
    6. Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean.
    7. Cool in pan on wire rack 5 minutes. Remove from pan.
    8. Cool for a few minutes. Serve.
