  • 1 head lettuce
  • 1/4 cup(s) onion, chopped
  • 3 pepperoncini
  • 1 tomato, quartered
  • 1/2 cucumber, peeled and chopped
  • 2 tablespoon(s) black olives
  • 1/4 cup(s) avocado, peeled, seeded and diced
  • 3 tablespoon(s) olive oil; divided
  • 1 tablespoon(s) lemon juice
  • 1 teaspoon(s) Italian seasoning
  • 2 teaspoon(s) salt
  • 2 teaspoon(s) pepper
  • 1 tablespoon(s) white wine vinegar
  • 4 chicken breasts
  • 3 juice of lime

Directions

    1. Tear lettuce into pieces and place in large bowl. Set aside.
    2. Add onion, pepperoncini, tomato, cucumber, black olives and avocado.
    3. Combine 2 tablespoon of olive oil, lemon juice, Italian seasoning, 1 teaspoon of salt, pepper, and vinegar into a jar and chill.
    4. Meanwhile, preheat the grill on high for 15 minutes.
    5. Place the chicken breasts in a pan and pour the lime juice over them. Add salt, and 1 tablespoon of olive oil. Coat well.
    6. Place the chicken breasts on the grill, reduce heat to medium and cook for 10 minutes, then flip and cook for 5 minutes more. 
    7. Remove from heat, slice into strips and place on top of the salad.
    8. Pour chilled dressing over top and toss well.
    9. Serve.
