  • 3 ounce(s) lean Italian chicken sausage, casing discarded
  • 2 cloves garlic, minced
  • 3/4 cup(s) green pepper, chopped
  • 1/2 cup(s) onion, chopped
  • 1 cup(s) sliced button mushrooms
  • 3 cup(s) low sodium chicken broth
  • 1 15 oz. can chick-peas, rinsed and drained
  • 1 can low sodium diced tomatoes, undrained
  • 1 teaspoon(s) dried basil
  • 1/2 teaspoon(s) dried oregano
  • 1/2 teaspoon(s) crushed red pepper flakes
  • 1/4 teaspoon(s) salt
  • 4 ounce(s) light mozzarella, shredded
  • 2 ounce(s) grated Parmesan

Directions

    1. In a large stock pot, cook the sausage and garlic over medium-high heat for 5 minutes. Break the sausage into small bits while it cooks. 
    2. Add the green peppers, onion, and mushrooms and cook them until vegetables are softened, about 6 minutes.
    3. Add the remaining ingredients and bring to a boil, covered, about 3 minutes. 
    4. Sprinkle mozzarella and Parmesan over the soup. 
    5. Serve and enjoy.
