Black Bean, Avocado & Corn Salad

  • 2 avocados, chopped
  • 15 1/2 ounce(s) can of black beans, drained and rinsed
  • 1/2 cup(s) red onions, chopped
  • 3 Roma tomatoes, diced
  • 1/2 lime, juice of
  • 1/8 teaspoon(s) coarse salt
  • 1/2 teaspoon(s) olive oil
  • 2 red pepper, chopped
  • 1/4 teaspoon(s) cayenne
  • 1 clove garlic, minced

Directions

    1. In a large bowl, mix all ingredients together. Squeeze lime juice on top and toss salad gently.
    2. Chill in refrigerator for at least an hour before serving, or you can place in pot and warm over medium heat if you prefer it warm.
