Light Cheddar Cheese Grits

  • 1 tablespoon(s) light unsalted butter
  • 3/4 cup(s) egg substitute
  • 1 cup(s) low fat milk
  • 3/4 cup(s) organic grits
  • 2 cup(s) light grated sharp cheddar cheese
  • 1/4 teaspoon(s) freshly ground black pepper

Directions

    1. Preheat oven to 325 degrees Fahrenheit. Use light unsalted butter to butter a 2-quart baking dish.
    2. In a medium bowl, whisk the egg substitutes and low-fat milk until blended.
    3.  In a heavy saucepan over medium-high heat, bring 2 cups of salted water to a boil. Slowly stir in the grits. Reduce the heat to low, cover and cook, stirring frequently until the grits are soft and the water is absorbed, can take about 20 minutes. Drop the heat as needed keeping the grits at a gentle cook. The grits will thicken.
    4. Place the grits into a bowl, add the egg mixture and stir until blended, about 2 minutes. Keep some small lumps. stir in 1.5 cups of grated light cheddar cheese and season some pepper. 
    5. Using a spatula, pour in the prepared grits into the buttered baking dish. Sprinkle the remaining grated cheese on top. Bake until the edges brown and the center is set. It will take about 55 minutes.
    6. Remove and serve.
