Grilled Red Snapper

Here is a fish dish that will have you seeing red. Grilled to gourmet perfection, it combines the perfect amount of seasoning. Snap to it.

  • 2 red snapper, cleaned
  • 2 garlic cloves, minced
  • 1 tablespoon(s) soy sauce (low sodium)
  • 1/2 teaspoon(s) lemon pepper
  • 1/2 teaspoon(s) nutmeg
  • 1/2 teaspoon(s) cayenne
  • 1/8 teaspoon(s) pepper
  • 1/8 teaspoon(s) salt
  • 2 cup(s) organic brown rice, cooked

Directions

    1. Preheat gas grill to 350 °F or prepare a medium to low fire in a charcoal grill.
    2. Cut 2 slits across red snapper on both sides. 
    3. In a small bowl, combine the garlic, soy sauce, lemon pepper, nutmeg, cayenne pepper, pepper and salt.
    4. Spread 1/2 the mixture inside each of the snapper and sprinkle one side of each fish liberally with mixture.
    5. Place fish, seasoned side down, on a basket for grilling.
    6. Rub the other side of the fish.
    7. Grill the fish for 8 to 10 minutes on each side basting with the mixture several times during cooking.
    8. Serve with a side of steamed rice.
