White Bean and Turkey Sausage Soup

White Bean and Turkey Sausage Soup

  • 16 ounce(s) northern beans
  • 1 tablespoon(s) extra virgin coconut oil
  • 2 turkey sausages, casings removed
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 8 cup(s) vegetable stock
  • 3/4 cup(s) grape juice
  • 1/4 cup(s) lemon juice
  • 3 teaspoon(s) thyme
  • 2 teaspoon(s) bay leaves
  • 1 teaspoon(s) cayenne pepper
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 1/2 cup(s) kale washed and chopped

Directions

    1. Soak beans in cold water, overnight (8 to 12 hours). Drain beans and rinse well.
    2. Add oil to a stockpot oven over medium heat and add the sausages.
    3. Cook about 8 minutes until browned. Set aside.
    4. Add the onions and garlic and cook on low heat for another 4 to 5 minutes.
    5. Add the vegetable stock, grape juice and lemon juice, and raise the heat to medium.
    6. Cook for 20 more minutes.
    7. Stir in the thyme, bay leaves, cayenne pepper, salt, pepper and kale.
    8. Bring to a boil.
    9. Cover partially and lower the heat to a simmer for another 10 minutes.
    10. Add the sausage and beans and simmer for 30 minutes.
    11. Serve hot.
