1 tablespoon(s) extra virgin olive oil
2celery stalks, chopped
2 cup(s) carrots, chopped
1 cup(s) onion, chopped
3garlic cloves, minced
3 teaspoon(s) bay leaves
2 teaspoon(s) oregano
1 dash(es) salt
1 dash(es) pepper
4 cup(s) vegetable broth
32 ounce(s) water
2 cup(s) lentils, rinsed
1can diced tomatoes
2 tablespoon(s) lemon juice
1/2 cup(s) rainbow chard
Directions
In a large soup pot, heat oil over medium heat.
Add the celery, carrot, and onion.
Cook about 7 minutes.
Stir in garlic, bay leaf, oregano, salt and pepper.
Add vegetable broth, water, lentils and tomatoes.
Bring to a boil and then reduce heat to a simmer. Cover and let cook for about 1 hour.
Stir in lemon juice and rainbow chard and stir until wilted.
