Kickin' Collard Greens

Kickin' Collard Greens

  • 1 tablespoon(s) extra virgin olive oil
  • 8 ounce(s) mushrooms, sliced
  • 1 onions, sliced
  • 2 1/2 garlic, cloves
  • 16 ounce(s) collard greens, cut into 2-inch pieces
  • 1 cup(s) vegetable broth
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 teaspoon(s) paprika
  • 1 teaspoon(s) Tabasco sauce

Directions

    1. Heat the olive oil in a large pot over medium-high heat.
    2. Add the mushrooms, and cook for 5 minutes.
    3. Add the onion, and cook until tender, about 5 minutes more.
    4. Add the garlic and cook for 2 minutes more.
    5. Add the collard greens, and fry until they start to wilt.
    6. Pour in vegetable broth, and season with salt, pepper and paprika.
    7. Reduce heat to low, and simmer for 40 to 45 minutes.
    8. Take the collard greens off the heat and add the Tabasco sauce.
