1onion, chopped
1 tablespoon(s) extra virgin olive oil
1/4 cup(s) unsweetened almond milk
1 1/2 cup(s) Egg Beaters
8 ounce(s) spaghetti, cooked
1 dash(es) salt
1 dash(es) pepper
2 ounce(s) reduced fat swiss cheese, grated
1/2 cup(s) broccoli, cooked
1 tablespoon(s) parsley
1/2 cup(s) marinara sauce
Directions
Preheat the oven to 350°F.
Heat oil in 10-inch skillet over medium heat.
Sauté the onion for about 2 minutes.
In a bowl, whisk together Egg Beaters, milk, salt and pepper.
Add the pasta, cheese, and broccoli into the eggs and pour into the skillet.
Bake for 25 minutes until semi-set.
Sprinkle with parsley.
Let cool for 5 minutes, then serve with a dollop of marinara sauce.
