Colorful Rice Pilaf

  • 1 tablespoon(s) extra virgin olive oil
  • 1 wild leeks, chopped
  • 1 cup(s) whole wheat couscous
  • 1/3 cup(s) pomegranate seeds
  • 1 1/2 cup(s) vegetable broth
  • 1 tablespoon(s) white wine vinegar
  • 4 tablespoon(s) parsley
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) lemon zest

Directions

    1. Heat the oil in a large saucepan over medium heat. Add the leeks and sauté for 1 minute.
    2. Stir in the couscous.
    3. Add 1 cup of vegetable stock, about 3/4 of the pomegranate seeds, and vinegar and bring to a boil over hight heat.
    4. Cover and turn off the heat.
    5. Keep the lid on until liquid is absorbed, about 7 minutes.
    6. Remove from the burner and stir in the parsley and lemon zest.
    7. Add salt. Sprinkle with the remaining pomegranate seeds.
    8. Serve.
