wild leeks, chopped

pomegranate seeds

white wine vinegar

Directions
Heat the oil in a large saucepan over medium heat. Add the leeks and
sauté for 1 minute.
Stir in the couscous.
Add 1 cup of vegetable stock, about 3/4 of the pomegranate seeds, and vinegar and bring to a boil over hight heat.
Cover and turn off the heat.
Keep the lid on until liquid is absorbed, about 7 minutes.
Remove from the burner and stir in the parsley and lemon zest.
Add salt. Sprinkle with the remaining pomegranate seeds.
Serve.
