Refried Black Beans

  • 2 cup(s) dried black beans, washed
  • 64 floz water
  • 2 garlic cloves, minced
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) black pepper
  • 1 tablespoon(s) vegetable oil

Directions

    1. Place the beans and water in a large pot and bring to a boil. 
    2. Cover, reduce to a simmer and cook for 1 hour and 20 minutes.
    3. Crush the beans in their liquid with a potato masher or the back of a large spoon.
    4. Cook garlic, salt and pepper in oil in a skillet over moderate heat, stirring about 1 minute.
    5. Add the beans with their liquid cooking over medium heat, stirring frequently.
    6. Once the liquid evaporates and the beans form a creamy consistency remove from heat.
    7. Serve warm with shredded cheddar cheese, if desired.
