2 cup(s) dried black beans, washed
64 floz water
2garlic cloves, minced
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1 tablespoon(s) vegetable oil
Directions
Place the beans and water in a large pot and bring to a boil.
Cover, reduce to a simmer and cook for 1 hour and 20 minutes.
Crush the beans in their liquid with a potato masher or the back of a large spoon.
Cook garlic, salt and pepper in oil in a skillet over moderate heat, stirring about 1 minute.
Add the beans with their liquid cooking over medium heat, stirring frequently.
Once the liquid evaporates and the beans form a creamy consistency remove from heat.
Serve warm with shredded cheddar cheese, if desired.
