Perfect Plantain Omelette

Perfect Plantain Omelette

  • 2 teaspoon(s) olive oil
  • 1 onion, peeled and chopped
  • 2 Soyrizo meatless sausages
  • 2 ripe plantains, cut into 1/2 inch slices
  • 16 ounce(s) egg beaters
  • 1 teaspoon(s) baking powder
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) black pepper
  • 1/2 tablespoon(s) butter

Directions

    1. In a large skillet, heat the olive oil over medium heat, and saute the onion and Soyrizo pieces.
    2. Add the ripe plantain slices, and continue cooking for 8 minutes until the plantain slices and Soyrizo pieces are well cooked.
    3. Transfer mixture to a colander, and drain off the oil.
    4. Add Egg Beaters into a bowl with baking powder, and season with salt and pepper.
    5. Stir in plantain mixture.
    6. Melt butter in a skillet over medium heat, add the omelette mixture to the skillet and cook over medium heat for about 7 minutes.
    7. Place a large plate over the frying pan, invert the omelette onto the plate, and slide it, uncooked side down, back into the skillet.
    8. Cook for another 5 minutes. 
    9. Serve warm.
