Spinach-Mushroom Scramble

It's no yolk. There are plenty of ways to liven up those egg whites. Toss in some spinach and mushrooms for a veggie delight. It is definitely all it's cracked up to be.

Spinach-Mushroom Scramble

  • 1 cup(s) egg whites
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 1/2 tablespoon(s) olive oil
  • 1/2 cup(s) sliced mushrooms
  • 1/2 cup(s) spinach, chopped
  • 1/8 cup(s) reduced fat cheddar cheese

Directions

    1. In a small bowl, whisk egg whites, salt and pepper.
    2. In a nonstick skillet, heat olive oil over medium heat.
    3. Add mushrooms and cook for about 5 minutes.
    4. Add spinach and cook until wilted.
    5. Reduce heat and add egg mixture.
    6. Add in cheese and stir for 1-2 minutes until melted.
    7. Serve hot.
