Low Fat Peanut Butter Cookies

Low Fat Peanut Butter Cookies

  • 1 package moist supreme sugar free premium yellow cake mix
  • 10 2/3 tablespoon(s) creamy peanut butter
  • 1/2 cup(s) applesauce
  • 2 tablespoon(s) egg whites
  • 1/8 cup(s) skim milk
  • 2 tablespoon(s) vanilla extract
  • 1/4 cup(s) granulated sugar

Directions

    1. Preheat oven to 375 ºF. Set aside two ungreased baking sheets.
    2. Place the cake mix, peanut butter, applesauce, eggwhites, milk, and vanilla in a large mixing bowl and beat with an electric mixer on low speed until the cookie dough is smooth.
    3. Place the sugar in a shallow bowl. Form the dough into 1-inch balls. 
    4. Roll each ball of dough in the sugar and arrange 12 balls on each backing sheet 2 to 3 inches apart.
    5. Place the baking sheets in the oven and bake the cookies until golden brown, 10 to 15 minutes. Immediately transfer the cookies to wire racks to cool. Repeat with the remaining dough.
