Low Fat Crockpot Chicken
There’s nothing like sitting down to a hearty homemade meal, especially when all of the hard work is done by the slow cooker. This chicken crockpot dish is a slow-cooked standout. It’s hard to believe that this warm creamy dish is much healthier than the alternatives.

- 6 chicken breasts, boneless skinless
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1/2 teaspoon(s) thyme
- 1/2 teaspoon(s) basil
- 4 floz white grape juice
- 1 1/4 cup(s) reduced fat can cream of chicken soup
- 4 ounce(s) sliced mushrooms, drained
- 1 cup(s) fat free sour cream
- 1 tablespoon(s) diced pimento
Directions
- Season chicken breast with salt, pepper, thyme and basil.
- Place seasoned chicken into crockpot.
- Combine white grape juice, chicken soup and mushrooms and pour over chicken.
- Cover and cook on low for 7 hours or on high for 3 hours.
- Add sour cream 30 minutes before taking out of crockpot.
- Top with pimento. Serve with rice.
