Marvelous Mango and Chicken
The mango doesn't fall far from the tree... and when it does, it goes great in this palate-pleasing poultry dish. Add another healthy chicken recipe to your repertoire. It's the great way to keep it interesting.

- 1 tablespoon(s) olive oil
- 1/2 cup(s) scallions
- 2 garlic cloves, minced
- 4 boneless, skinless chicken breasts,
- 1 dash(es) salt
- 1 dash(es) pepper
- 1 teaspoon(s) oregano
- 2 mangos, peeled and cubed
- 2 ounce(s) lime juice
- 1/8 teaspoon(s) nutmeg
- 8 floz mango juice
Directions
- Heat the olive oil in a medium skillet over medium heat.
- Sauté scallions and garlic.
- Place chicken breast halves in the skillet and sprinkle breasts with salt, pepper and oregano.
- Cook 8 minutes on each side. Set aside.
- Add mango, lime juice, nutmeg and mango juice to the skillet and cook over medium heat for 8 minutes.
- Spoon over chicken breasts halves and serve.
