Fantastic Feta Shrimp and Basmati Rice
Here's a one-pot meal that is chock full of flavor. A trifecta of great taste, it incorporates basmati rice, shrimp and feta cheese to make for a mouthwatering offering. There is more than a grain of goodness to this dish.

- 14 floz water
- 1 cup(s) basmati rice
- 1 cup(s) onions, chopped
- 3/4 cup(s) apple juice
- 4 tablespoon(s) white wine vinegar
- 2 cup(s) tomatoes, chopped
- 2 tablespoon(s) cilantro
- 1 teaspoon(s) marjoram
- 1/3 tablespoon(s) dill weed
- 1/2 teaspoon(s) paprika
- 1 dash(es) salt
- 16 ounce(s) shrimp, peeled and deveined
- 8 ounce(s) reduced fat feta cheese
- 2 tablespoon(s) basil
Directions
- Fill a medium saucepan with 1 3/4 cups water and bring to a boil.
- Add the rice, stir and bring back to a full boil.
- Turn heat to low and cover and cook for 15 minutes.
- Meanwhile, use a large nonstick skillet to sauté onions, apple juice, white wine vinegar over medium heat for 5 minutes.
- Add tomatoes, cilantro, marjoram, dill weed, paprika and salt and cook for 8-10 minutes.
- Add shrimp and cook for another 10 minutes.
- Stir in feta cheese and cook for about 2 minutes until cheese is melted.
- Serve over top of the cooked rice and garnish with basil.
