Gluten Free Chicken Corn Bites

- 1/2 cup(s) olive oil
- 2 cup(s) cornmeal
- 1/4 teaspoon(s) paprika
- 1/2 teaspoon(s) garlic salt
- 16 ounce(s) chicken breasts, boneless skinless, cut into strips
- 2 eggs
Directions
- In a skillet, warm oil over high heat.
- In a blender, blend cornmeal until it is a fine flour, add paprika and garlic salt, blend well.
- Place cornmeal flour mixture in a large gallon sized zip lock baggie.
- Beat eggs in a bowl and then dip chicken strips in the eggs. Afterwards, place chicken in the baggie, and shake.
- Fry chicken strips in a skillet until cooked through, about 8-10 minutes.
- Transfer to a paper towel-lined plate to remove excess oil.
- Serve and enjoy!
